Lemon Kale Hummus


Can you believe a year ago I never had the stuff?
I know!

Now I have a huge surplus of it on hand due to my co-op shares I get weekly. 
No, I am not complaining..at all.

So what to do with all this good stuff?

First up.

Lemon Kale Hummus.

It was pretty much love at first taste.

Here you go. 
It is all yours
Eat up!

Lemon Kale Hummus

1 15oz can Garbanzo beans aka chick peas
2-4 tbs tahini (crushed sesame seeds) 
Juice from 1 lemon (3-4) tbs
2 cloves garlic (can roast the  garlic for less potency)
1/4 cup olive oil
3-4 large kale leaves,c chopped, with stems removed
Cilantro (optional)

-Get out the food processor or blender if you don't own a food processor
-blend chick peas until mixed
-add olive oil and tahini (should have a smooth consistency when well mixed)
-add chopped kale, garlic, and lemon juice (and cilantro if desired)
-serve with veggies, crackers or use as a spread!
