Tomato, Basil & Mozzarella

Let me share with you my top five favorite tastes:
Obviously these are never served together, but a combination of a few of them can be quite delish.
Like tomatoes & cheese
Especially when the tomatoes and fresh and have tons of flavor 
and when you're in Wisconsin, the cheese is usually from local farms 
And when it involves using part of your fresh herb garden in the mix
It's a winner!
My idea was to make this into a pizza.
And I still will
Just not now
But I promise when I do
You'll know about it!
Personally, I love recipes that can be altered super easily.
If you're not a huge fan of a ton of cheese or a large quantity of tomatoes just isn't your thing
Then cut back or amp up the basil
 or add some balsamic.. 
options ore endless
you can even slice a tomato add the sliced mozzarella and top with a basil leaf 
the presentation would be great!
Or put it on a tooth pick using grape tomatoes to make a mini ka bob
and serve it at a get together
okay I'll stop
Here's my version!
 Chopped Tomato, Basil, and Mozzarella Salad

8oz fresh mozzarella, chopped into bite sized pieces
4 medium red tomatoes
10 basil leaves (to taste)
2 tablespoons olive oil
salt and pepper
Mix and serve!
