Oven-Roasted Cauliflower

Does anyone else feel like they are melting out there?
I am seriously saying a prayer every night that my AC doesn't fail me.

So what do you do when it's 90 some degrees outside?
Fire up the oven.
I am not sure why I did it either, but I ended up with some awesome results!

I had a head of cauliflower burning a hole in my fridge.
My Pinterest is has a pretty good stash of cauliflower recipes pinned.
But do you think when I got a head of cauliflower in my co-op produce box I looked up a pinned recipe?
I did my own thing
and I liked it!
I can honestly say I had never had roasted cauliflower
but with the super easiness of it,
I will be made more frequently
most likely in the winter
when it feels like 95 below out..

Oven-Roasted Cauliflower
1 head of cauliflower (or about 4-5 cups)
1 tablespoon olive oil
1 teaspoon lemon juice
1/2 tsp garlic powder
*Break up the cauliflower into small pieces and place in a large bowl
*Coat with olive oil, then add lemon juice, then garlic salt
*Spread florets on aluminum foil
*bake at 450 deg until browned
