I have no clue where the desire to go there came from.
However, my parents had no desire to go there.
Then my dad happened to get a free hotel stay at select hotels.
Needless to say,
They really couldn't argue against me.
It was fate.
In my teenage eyes.
So we road tripped out there,
We stopped in Detroit and a very scary hotel in the ghetto,
and ate at a small diner.
The soups of the day was
Greek Lemon Rice
We Iowans had never heard of Greek Lemon Rice Soup.
So naturally I avoided the "foreign" food.
and the rest of my family choose the Greek Lemon Rice.
I did sneak a bite of it.
and LOVED IT.
I've made countless versions of this soup.
I can't remember too much about that vacation to Canada.
Other then amazing waterfalls,
a moody brother,
and this soup.

Greek Chicken Lemon Rice Soup
6 cups chicken broth
2 cups diced chicken, cooked
2 eggs, room temperature
Juice from 2 large lemons
2 bay leaves
2 whole cloves
3/4 cup white rice
Cook chicken, chop into small pieces and set aside.
Boil chicken broth, bay leaves, and whole cloves. Reduce heat, add rice, and simmer covered for 15 minutes. Remove from heat and set aside. In a separate bowl, whisk eggs and add lemon juice. Ladle one scoop of broth into egg/lemon juice mixture and whisk constantly. Then add a second ladle and continue to whisk. Add the lemon and egg mixture together and stir constantly.
Good thing to know about this recipe.
The ladling of the broth into the mix is critical.
If it's not done right, the egg yoke hardens.
I've cheated and even let the soup cool before adding it into the egg mix,
then heating back up once mixed.
