Oven Roasted Cinnamon Almonds

Happy Veterans Day!

Today I get to kick off the week by introducing you to a new favorite of mine:

Oven Roasted Cinnamon Almonds.
Earlier this fall I tried German Cinnamon Almonds,
Blog post here,
and knew I had to recreate them.

I usually stick to plan jane almonds.
But I am getting slightly board with them.
There's only so much crunching on a nut before you get board with it.
So these are a good pick me up! 

I tried to make a wee bit healthier by cutting down the sugar,
by a lot,
adding more cinnamon,
 and baking them. 

I took them on the road with me a couple weekends ago.
They accompanied my drive though Non-fat, no whip, Mocha fabulously! 

I should warn you, 
The recipe is really heavy on the cinnamon.
I love the stuff
Divide the recipe up and play around to suit your taste!
P.S. your kitchen will smell amazing!

Oven Roasted Cinnamon Almonds
3 cups plain almonds
1 egg white
1/2 tsp vanilla extract
1/3 cup sugar (or any sugar substitute  )
1 T ground cinnamon
-mix egg white and vanilla together
-add almonds, coat to cover
-in a seperate bowl, mix together sugar and cinnamon
-add sugar mix to almonds
-spread on a aluminum foil lined baking sheet
-bake at 300 for 30 minutes, mixing once during cooking time.
